Autochthonous varieties of white grape of Penedès considerate fundamental for the elaboration of cava are Maccabees, Xarel·lo and Parellada. With them, Chardonnay and Subirat Parent or Malvasia Riojana and a variety of black grape, the Pinot Noir, are the authorized ones for the elaboration of white cavas. For Cava Rosado just varieties of black grape Garnacha, Monestrell, PinotNoir and Trepat are authorized. |
